If you are in Registered Users+ you can change it under UserCP > Edit Profile, and find where it says Custom Title.
For those that are not in RU+ this is called a rank, and changes with how many posts you make.

Just as a warning: Do not go posting one-liners everywhere just to get your post count up so you can find out the next rank, you will only end up with your posts deleted and locked, as well as a general irritation from most other members
